- Sieve or place 1 to 2 matcha spoons (about 2g) in your bowl.
- Add 65-75ml of hot water (80°C, not boiling, this is important to retain all the benefits and avoid a more pronounced bitterness! ☺️)
- Whisk vigorously in an "M" as in "Maïdo" or a "W" shape with the chasen until you get a fine and creamy foam! If you're feeling a bit lazy and we understand, no problem: you can use an electric whisk. We (almost) won't judge you for it!

How to prepare your matcha?
3 simple steps for a perfect matcha

Measure your matcha
Add 1 to 2 bamboo scoops (chashaku) of matcha to your bowl, depending on desired strength.
Sift your matcha to avoid lumps!

Add the hot water
Pour preserve the flavors, pour in 60 to 80ml of hot (but not boiling!) water at a maximum of 80°C.
Water that is too hot makes matcha bitter. 70-80°C is perfect!

Whisk in an "M" shape
Using your chasen (bamboo whisk), whisk vigorously in "M" shapes like Maïdo until you get a smooth foam.
The secret: quick wrist movements, not arm movements!

Mei-san is the epitome of smoothness: very little bitterness, a silky texture, a lovely roundness... and a subtle hint of hazelnut that caresses the palate.
Daichi-san, on the other hand, is like an imposing older brother: more intense, greener, livelier. If Mei-san whispers in your ear, Daichi-san speaks loudly (but with passion)
Absolutely! Mei-san is delicious as usucha (the traditional version, whisked with hot water) — that's how it's enjoyed to fully experience its sweetness and umami.
But if you're in the mood for a creamy, comforting latte, it's also perfectly suited for that. Its natural richness pairs perfectly with milk (dairy or plant-based), without any bitterness or overwhelming flavor. Mei-san is a matcha that aims to please, no matter how it's prepared.
Matcha contains a little caffeine (around 30 mg per serving), so as always during pregnancy: listen to your body, be reasonable, and if in doubt… ask your favorite doctor. Mei-san won't be offended.
